I’m enjoying the busyness though. Busy discovering & exploring my new city, busy with my job, busy with new & old friends. But back to the food. Stuffed shells is one of my favorite meals, & it’s simple enough but this recipe takes it one step simpler: no stuffing. Cook the pasta and make your sauce (or buy it at the store, no judgement since that’s what I did this time!) and top it off with ricotta & fresh basil.
