Oodles of Zoodles


I got a spiralizer back at Christmas, and it has been a life changer. I’ve spiralized everything from zucchinis to potatoes (russet + sweet), onions, carrots, and more. Honestly, I’m surprised I haven’t posted a recipe sooner, but today I’ve got a good one for you: Chicken + Zucchini Noodles Stir Fry (recipe below).

It’s a really quick meal to throw together, and using the little hand spiralizer is pretty quick + easy. You can substitute the chicken with shrimp or beef. . .or leave it out all together for a vegetarian option. Sometimes I throw in other veggies I have on hand like mushrooms, edamame, or broccoli. You can really cater this to whatever veggies you love.

I’ve found so many zoodle recipes (zucchini + noodles) that I’m dying to try, and if they are all as easy + tasty as this one, then I may never go back to regular noodles again. (Ok, so that might be an extreme statement because I love me some pasta.)

Chicken + Zucchini Noodles Stir Fry
• 1 – 2 chicken breasts, marinated in teriyaki sauce
• 4 zucchinis
• 1/2 yellow onion
• 1 – 2 carrots
• 2 T vegetable oil
• 2 T teriyaki sauce
• 1 T soy sauce
• 1 T sesame seeds
•  dash of ginger (optional)
1. Dice the chicken and cook in a skillet, add additional marinade if needed.
2. While the chicken is cooking, spiralize the zucchinis (pat dry with a paper towel), onion, and carrots (you can also use a vegetable peeler and shave the carrot into thin slices).
3. Heat oil in a large skillet or wok. Add onions and carrots, and cook for 4-5 minutes.
4. Add zucchini, soy sauce, teriyaki sauce, and sesame seeds. Cook for 5 minutes. (Optional: Add a dash of ginger with the sauces.)
5. Stir in the chicken and cook for ~2 more minutes or until zucchini is tender. Remove from heat and serve.
