Sides Matter: Mango Avocado Salsa


Finding healthy and versatile side dishes can be challenging. I am constantly looking for new ideas to keep meals exciting, and although I have my favorite recipes, it’s always good to mix some new ones into the rotation, so today I’m sharing one of my recent favorites: Mango Avocado Salsa

Grab some tortilla chips and use this as, you guessed it, salsa! Or use it to top off your tacos.  Honestly, with the amount of flavor packed into this, you could go the vegetarian route and use it as your taco filling. This mango salsa is also the perfect side with salmon and coconut rice. And those are just a few of the pairings I’ve tried!

I also think this salsa has a ton of potential for experimentation depending on flavors you love or what fruits and veggies are in season. Maybe add some heat with jalapeños, or make it extra refreshing with chopped cucumbers. With fall approaching, how about adding in some pomegranate seeds or diced apples? My mouth is watering just thinking of the possibilities.

Mango Avocado Salsa
• 1 mango, peeled + diced
• 1 avocado, peeled + diced
• 1/4 red onion, chopped
• 1/2 red pepper, chopped
• 1/2 cup fresh cilantro, chopped
• 1 lime
• pinch of sugar
• salt + pepper to taste
• splash of coconut water, optional
1. In a bowl, toss together the mango, avocado, red onion, red pepper, and cilantro.
2. Add juice of one lime, splash of coconut water, pinch of sugar, and season with salt + pepper.
3. Keep chilled until ready to serve.
