Bacon + Brussels + Balsamic


I hope everyone is enjoying their short work week! I know I am. I added an extra vacation day to last week’s long weekend, and definitely took advantage of it. Caught up on some sleep, escaped from LA with a day trip to Idyllwild (blog post coming soon), and even watched season 1, episode 1 of Game of Thrones (yes, I was one of those people who hadn’t jumped on the GoT bandwagon). I even managed to try a few new recipes, one of which I will be sharing today: Bacon, Brussels, + Balsamic Flatbread

Everything about this recipe is worthy of the spotlight. Brussels sprouts are one of my new favorite veggies. I’ve basically become obsessed with grilled/carmalized onions lately. Bacon. . .well. . .enough said. Mozzarella + ricotta cheese are delicious and essential for any flatbread or pizza in my opinion. And topped off with a sweet balsamic drizzle. Yum.

This recipe works great as an appetizer for snacking, but it’s also perfect for a quick + easy dinner. And I mean if you think about it, a flatbread pretty much falls in the pizza family, so you know it’s gonna be good.

Bacon + Brussels + Balsamic Flatbread
• 3/4 cup Brussels sprouts, sliced thin
• 3-4 slices of cooked bacon, chopped or crumbled
• 1/4 red onion, sliced thin
• 4 cloves of garlic, minced
• 1 Flatbread (store-bought)
• 1 cup Mozzarella cheese
• Ricotta
• Balsamic Glaze
• Olive Oil
1. Preheat oven according to flatbread packaging.
2. Add Brussels sprouts, red onion, garlic, and olive oil to a sauce pan and cook for 4-5 minutes, stirring frequently. Once ready, remove from heat, and set aside.
3. Brush flatbread with olive oil and sprinkle evenly with Mozzarella cheese. Top with Brussels mixture, bacon, and ricotta cheese.
4. Bake for 10 minutes until cheese is melted.
5. Drizzle with Balsamic glass and serve.
