Say Cheese


Cool weather is hopefully here to stay, the holiday season is upon us, and all I want to do is indulge in my favorite comfort foods. Tis the season for eating, am I right?

Mac + cheese is one of my all time favorite foods, but unfortunately not one of the healthiest options. Today I’m sharing a recipe for a slightly healthier alternative that will trick you into getting your helping of veggies but still allow you to enjoy all the cheesy goodness: Crockpot Cauliflower + Cheese.

As most crockpot recipes, this one is super easy. Chop it, melt it, cook it, eat it. Enjoy a big bowl on its own, or make it the side dish to your meal. We paired it with honey glazed pork chops + crispy green beans. Easy, cheesy, and good.

Crockpot Cauliflower + Cheese
• 1 head of cauliflower
• 1 can cheddar soup
• 5 oz can evaporated milk
• 2 cups shredded sharp cheddar
• 1/4 cup diced onion
• 1/2 t salt
• 1/2 t pepper
• 1/2 t paprika
1. Cut cauliflower into florets, dice onions, and grease the inside of the crock pot.
2. Add cauliflower to the crockpot.
3. Combine remaining ingredients in a saucepan and stir over medium heat unto cheese is melted.
4. Pour the cheese sauce over the cauliflower and cook on low for 3.5 hours.

    SAVING. This looks AMAZING!!!!!! I’m obsessed with mac and cheese but rarely let myself indulge.
