Crispy Lemon Chicken


Today’s recipe is pretty simple, and doesn’t require too many ingredients: Crispy Lemon Chicken.  Simple recipe + minimal ingredients makes this perfect for all the cookouts or outdoor dinners that will most likely come your way this spring + summer. 

The dish is exactly as it sounds: crispy with a touch of lemon flavoring. I definitely recommend adding some extra lemon zest for garnish to kick the flavor up a notch. I served this up with parmesan risotto + crispy Brussels sprouts, and it was delish. Scroll to the bottom of the post for the full recipe!

In other news: Madrid has been wonderful so far. Zack’s job has been keeping him busy during the week (and even a little on the weekends), but I’ve been able to do my fair share of exploring during the week, from visiting different museums + parks to staking out the best restaurants for us to try on the weekends. Crispy Lemon Chicken
• 1 cup vegetable oil
• 1 cup Italian bread crumbs
• Zest of 1 Lemon
• 1 lb boneless chicken breast, sliced thin
• 1/2 cup all-purpose flour
• 2 eggs
• Salt + Pepper, to taste
1. Combine bread crumbs, lemon zest, and salt + pepper in a large bowl. Also set aside one bowl of the flour and one bowl of the eggs, beaten.
2. Dip chicken into flour, then eggs, and finally into the bread crumb mixture. Make sure the chicken is well coated.
3. Set chicken aside and heat vegetable oil in a large skillet over medium high heat.
4. Once oil is heated, add chicken to the skillet. (Working in small batches is best.) Cook 3-4 minutes/side, until crispy and golden. Transfer to a paper towel lined plate to absorb excess oil.
5. Garnish with extra lemon zest and serve.
