Not only will you have a delicious taco at your fingertips, but these tacos are easy to make and a healthy (vegetarian) option. Mix the chickpeas and spices together, and bake them in the oven. While they bake, get all the toppings together (cheese, purple cabbage, lettuce, cilantro…knock yourself out). Ready for the icing on the cake? Top it off with Homemade Cilantro Lime Crema (i.e. a sour cream replacement that is a million times better & healthier). Check out both recipes below.
Now if you’re feeling really fancy (and not vegetarian), try combining the chicken tacos with the chickpeas. Another yummy option in my opinion. There’s also options when it comes to the tortillas. Crunchy or soft? Why choose? You can easily throw soft tortillas in the oven and create your very own crunchy taco shell. You can create a crunchy taco bowl (see how to here), or simply use the oven rack to create a taco shell (see below). So many choices, and in this case, there is no wrong one. Muy Bien!
