I hope everyone is enjoying their short work week! I know I am. I added an extra vacation day to last week’s long weekend, and definitely took advantage of it. Caught up on some sleep, escaped from LA with a day trip to Idyllwild (blog post coming soon), and even watched season 1, episode 1 of Game of Thrones (yes, I was one of those people who hadn’t jumped on the GoT bandwagon). I even managed to try a few new recipes, one of which I will be sharing today: Bacon, Brussels, + Balsamic Flatbread.
Everything about this recipe is worthy of the spotlight. Brussels sprouts are one of my new favorite veggies. I’ve basically become obsessed with grilled/carmalized onions lately. Bacon. . .well. . .enough said. Mozzarella + ricotta cheese are delicious and essential for any flatbread or pizza in my opinion. And topped off with a sweet balsamic drizzle. Yum.
This recipe works great as an appetizer for snacking, but it’s also perfect for a quick + easy dinner. And I mean if you think about it, a flatbread pretty much falls in the pizza family, so you know it’s gonna be good.
